Instructions
- Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
- Combine cottage cheese, blueberries, lemon zest, and lemon juice in a mixing bowl.
- Blend oats, honey (or maple syrup), and vanilla extract in a separate bowl.
- Mix wet and dry ingredients together until just combined.
- Form bite-sized balls and place them on the baking sheet, leaving space in between.
- Bake for about 15-20 minutes or until lightly golden.
- Remove from the oven and let cool completely before enjoying.
Notes
Do not over-bake to keep them moist. Let them cool completely to prevent sogginess.
