Ingredients
- 2 cups fresh spinach (or frozen, thawed and drained)
- 1 can artichoke hearts, drained and chopped
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 cup shredded cheese (blend of mozzarella and Parmesan)
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1/4 tsp red pepper flakes (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Prep the spinach by wilting it in a skillet over medium heat for 2-3 minutes, then chop finely.
- Mix the cream cheese, sour cream, and mayonnaise in a bowl until smooth, then stir in spinach, artichokes, garlic, and half of the shredded cheese, seasoning with salt, pepper, and red pepper flakes.
- Transfer the mixture to a greased baking dish and smooth the top, sprinkling the remaining shredded cheese on top.
- Bake for 25-30 minutes or until bubbly and golden brown.
- Serve warm with toasted baguette slices, pita chips, or fresh vegetables.
