Ingredients

  • 2 cups fresh spinach (or frozen, thawed and drained)
  • 1 can artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 cup shredded cheese (blend of mozzarella and Parmesan)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep the spinach by wilting it in a skillet over medium heat for 2-3 minutes, then chop finely.
  3. Mix the cream cheese, sour cream, and mayonnaise in a bowl until smooth, then stir in spinach, artichokes, garlic, and half of the shredded cheese, seasoning with salt, pepper, and red pepper flakes.
  4. Transfer the mixture to a greased baking dish and smooth the top, sprinkling the remaining shredded cheese on top.
  5. Bake for 25-30 minutes or until bubbly and golden brown.
  6. Serve warm with toasted baguette slices, pita chips, or fresh vegetables.
