Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/3 cup honey
  • 4 cloves garlic, minced
  • 3 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 cup fresh vegetables (bell peppers, snap peas, broccoli)
  • 2 cups cooked rice or quinoa
  • Juice of 1 lime or lemon

Instructions

  1. Prepare the shrimp: rinse under cold water, then pat dry.
  2. Make the sauce: mix honey, soy sauce, and minced garlic in a bowl.
  3. Cook the shrimp: heat vegetable oil in a skillet over medium-high heat, add shrimp and cook for 2-3 minutes until pink and opaque.
  4. Flip the shrimp and cook for another minute.
  5. Add the sauce: pour over the shrimp and stir gently. Cook for another 2-3 minutes until thickened.
  6. Cook the vegetables: add them to the pan and stir-fry for an additional 2-3 minutes.
  7. Serve: spoon shrimp and sauce over rice or quinoa, garnish as desired.

Notes

Avoid overcrowding the pan to achieve perfect caramelization of the shrimp.
