Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup warm water
  • 1/2 teaspoon salt
  • 1 cup fresh vegetables (carrots, bell peppers, snap peas, mushrooms)
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • Optional protein (chicken, shrimp, or tofu)

Instructions

  1. Make the dough: Combine flour, salt, and warm water in a bowl. Knead until smooth and let it rest covered for 30 minutes.
  2. Roll it out: Divide the dough into smaller portions and roll each portion as thinly as possible.
  3. Cut the noodles: Use a sharp knife to cut the rolled dough into thin strips, dusting with flour to prevent sticking.
  4. Cook the noodles: Boil a pot of water and cook the noodles for 2-3 minutes until tender, then drain and toss with oil.
  5. Sauté the vegetables: Heat oil in a skillet, add minced garlic, then toss in fresh vegetables and cook until vibrant and just tender.
  6. Combine: Add the cooked noodles to the skillet, drizzle soy sauce over, and toss everything together.
  7. Serve hot: Plate the noodles, garnish with green onions or sesame seeds if desired.

Notes

For a twist, substitute all-purpose flour with whole wheat flour. Add chili oil for some heat.
