Ingredients
- 2 cups gluten-free flour blend (brown rice flour, almond flour, tapioca flour)
- 1 cup plain Greek yogurt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tbsp honey or maple syrup
- 1/4 cup olive oil
Instructions
- Preheat your oven to 350°F (175°C) and prepare a loaf pan.
- Mix dry ingredients in a large bowl.
- Combine wet ingredients in another bowl.
- Pour wet mixture into dry ingredients and fold gently.
- Transfer the batter into the prepared loaf pan.
- Bake for 45–50 minutes or until a toothpick comes out clean.
- Cool for 10 minutes in the pan before transferring to a wire rack.
- Enjoy with butter or as a sandwich!

For added flavor, consider mixing in herbs like rosemary or thyme.
