- 1.5 lbs Boneless Chicken Breasts or Thighs
- 1 cup Pepperoncini Peppers (pickled or fresh)
- 4 cloves Garlic (minced)
- 1 medium Onion (chopped)
- 1 cup Chicken Broth
- 2 tablespoons Olive Oil
- 1 teaspoon Italian Seasoning
- Salt (to taste)
- Pepper (to taste)
- Red Pepper Flakes (optional)
Instructions
- Prep the chicken: Trim the chicken and cut it into bite-sized pieces for even cooking. Season with salt and pepper.
- Sauté the aromatics: Heat olive oil over medium heat. Add chopped onions and minced garlic, sautéing until translucent, about 3 minutes.
- Cook the chicken: Add chicken pieces, stirring occasionally until golden brown and cooked through, about 6-8 minutes.
- Add the pepperoncini: Stir in pepperoncini and a splash of their juice. Sprinkle red pepper flakes for extra kick.
- Simmer: Pour in chicken broth, scraping the pan. Let simmer for about 10 minutes.
- Serve: Best served warm over rice or with crusty bread.
Notes
Do not overcrowd the skillet to achieve a golden-brown crust. For a deeper flavor, deglaze with a splash of white wine after sautéing the aromatics.
