Ingredients
- 1 lb boneless Chicken (breast or thighs)
- 1 lb Fresh Green Beans
- 4 cloves Fresh Garlic, minced
- 1 Lemon, zested and juiced
- 2 tbsp Olive Oil
- Salt to taste
- Pepper to taste
Instructions
- Prep your ingredients: Gather all your ingredients and chop the garlic. Zest the lemon and set aside, then squeeze the juice into a small bowl. Wash and trim the ends of the green beans.
- Heat the skillet: In a large skillet, heat a tablespoon of olive oil over medium-high heat until shimmering.
- Cook the chicken: Season the chicken on both sides with salt, pepper, and half the lemon zest. Add the chicken to the skillet, cooking for about 6-7 minutes per side until cooked through. Remove and let rest.
- Sauté the green beans: In the same skillet, add olive oil if needed, toss in garlic and sauté for about 30 seconds. Add green beans, a pinch of salt and pepper. Sauté until tender-crisp, about 3-5 minutes.
- Combine and serve: Return the chicken to the skillet, pour in any juices, drizzle with fresh lemon juice, sprinkle remaining lemon zest, and toss gently. Serve immediately.
Notes
For a vegetarian twist, substitute chicken with shrimp or tofu. You can also add seasonal vegetables like zucchini or bell peppers.
