Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup finely chopped mushrooms
  • 1 bell pepper, finely chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs (or substitute with flaxseed or applesauce)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • ½ cup breadcrumbs (panko or ground oats)
  • Olive oil for sautéing

Instructions

  1. Cook the quinoa: Rinse quinoa under cold water, combine with 2 cups of water in a saucepan, bring to a boil, reduce heat, cover, and simmer for about 15 minutes. Fluff and let cool.
  2. Prepare the vegetables: Heat olive oil in a skillet and sauté mushrooms, bell pepper, and onion until soft. Add garlic and cook for an additional minute.
  3. Mix everything together: In a bowl, combine cooked quinoa, sautéed veggies, eggs, spices, and breadcrumbs.
  4. Shape the patties: Form the mixture into patties, about 3 inches in diameter.
  5. Cook the patties: Heat more olive oil in the skillet, add patties and cook for 4-5 minutes on each side until golden brown.
  6. Serve: Enjoy warm or at room temperature, optionally with yogurt or lime.

Notes
