Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup finely chopped mushrooms
- 1 bell pepper, finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 eggs (or substitute with flaxseed or applesauce)
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- ½ cup breadcrumbs (panko or ground oats)
- Olive oil for sautéing
Instructions
- Cook the quinoa: Rinse quinoa under cold water, combine with 2 cups of water in a saucepan, bring to a boil, reduce heat, cover, and simmer for about 15 minutes. Fluff and let cool.
- Prepare the vegetables: Heat olive oil in a skillet and sauté mushrooms, bell pepper, and onion until soft. Add garlic and cook for an additional minute.
- Mix everything together: In a bowl, combine cooked quinoa, sautéed veggies, eggs, spices, and breadcrumbs.
- Shape the patties: Form the mixture into patties, about 3 inches in diameter.
- Cook the patties: Heat more olive oil in the skillet, add patties and cook for 4-5 minutes on each side until golden brown.
- Serve: Enjoy warm or at room temperature, optionally with yogurt or lime.
Notes
For a vegan option, substitute eggs with flaxseed or applesauce. Customize the vegetables based on seasonal availability.
