Instructions
- Heat your pan: Begin by placing a non-stick skillet over medium heat. Add the butter or olive oil, allowing it to coat the bottom of the pan and melt completely.
- Add the feta: Once the butter is bubbly, crumble or chop the feta into the pan. Let it cook for about 2 minutes until it starts to brown slightly.
- Crack the eggs: Carefully crack the eggs over the feta, keeping the yolks intact.
- Season: Sprinkle salt and pepper over the eggs and cover with a lid.
- Cook to perfection: Cook for about 3-5 minutes until the whites are set but the yolks are still runny.
- Garnish and serve: Slide the eggs onto a plate, spooning some crispy feta alongside. Top with fresh herbs.
