Ingredients
- 1 cup orzo
- 1 can tuna, drained
- 1 medium zucchini, diced
- 2 cloves garlic, minced
- 1 cup cream or milk
- 3 cups chicken or vegetable broth
- Fresh parsley or dill, for garnish
- Salt and pepper to taste
- Parmesan cheese, for serving
Instructions
- Heat a pot over medium heat and drizzle olive oil.
- Sauté minced garlic until fragrant, being careful not to brown it.
- Add in the rinsed orzo, stirring to coat with garlic oil.
- Pour in the broth and bring it to a simmer.
- Stir in the zucchini and let it cook until tender, about 3-4 minutes.
- Add the tuna and cream/milk, mixing until well combined.
- Season with salt, pepper, and herbs. Simmer for another 2-3 minutes.
- Serve warm, garnished with Parmesan and fresh herbs.
