Instructions

  1. Prepare the Dough: Combine warm milk, sugar, and yeast in a bowl; let it bubble and froth for about five minutes.
  2. Mixing and Kneading: In a bowl, whisk together flour, salt, and cinnamon. Add yeast mixture, melted butter, and eggs. Mix until shaggy and knead for 10 minutes.
  3. First Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise until doubled in size, around an hour.
  4. Prepare the Cinnamon Filling: Combine brown sugar, cinnamon, and a pinch of salt.
  5. Shape the Dough: Roll the risen dough into a rectangle, spread butter, and sprinkle the cinnamon-sugar mixture.
  6. Rolling and Slicing: Roll the dough tightly into a log and slice into one-inch thick pieces.
  7. Second Rise: Place slices in a greased loaf pan, cover, and let them rise until puffed, about 30-45 minutes.
