Instructions
- Preheat the oven to 350°F (175°C).
- Prepare two 9-inch round cake pans by greasing and lining with parchment paper.
- Mix the dry ingredients: whisk together flour, baking powder, baking soda, and salt.
- Cream the softened butter and sugar until light and fluffy.
- Add eggs one at a time, then mash in ripe bananas and add vanilla extract.
- Combine the wet and dry ingredients, mixing until just combined.
- Bake for 25-30 minutes or until a toothpick comes out clean. Cool for 10 minutes, then transfer to wire racks.
- Prepare the frosting by beating cream cheese and gradually adding powdered sugar and whipping in heavy cream.
- Assemble by placing one cake layer on a platter, frost, add bananas and nuts, then top with the second layer and frost the entire cake.
- Add whipped cream and garnish with sliced bananas, cherries, and nuts.
