A delicious Banana Split Cake that captures the essence of summer with layers of banana flavor, creamy frosting, and vibrant fruit toppings.

  • Total Time: 50 minutes
  • Yield: 8 servings

Ingredients

  • 3 ripe bananas
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 8 oz cream cheese
  • Cherries and nuts (optional, for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare two 9-inch round cake pans by greasing and lining with parchment paper.
  3. Mix the dry ingredients: whisk together flour, baking powder, baking soda, and salt.
  4. Cream the softened butter and sugar until light and fluffy.
  5. Add eggs one at a time, then mash in ripe bananas and add vanilla extract.
  6. Combine the wet and dry ingredients, mixing until just combined.
  7. Bake for 25-30 minutes or until a toothpick comes out clean. Cool for 10 minutes, then transfer to wire racks.
  8. Prepare the frosting by beating cream cheese and gradually adding powdered sugar and whipping in heavy cream.
  9. Assemble by placing one cake layer on a platter, frost, add bananas and nuts, then top with the second layer and frost the entire cake.
  10. Add whipped cream and garnish with sliced bananas, cherries, and nuts.

Notes

Ensure the bananas are ripe for the best flavor and moisture. Avoid over-mixing for a light cake.
