Instructions
- Cook the tortellini according to package instructions. Drain and let it cool.
- Prepare your fresh veggies by dicing the bell peppers, halving the cherry tomatoes, and chopping the cucumbers.
- Whisk together the olive oil, balsamic vinegar, minced garlic, and honey in a small bowl until smooth.
- Combine the cooled tortellini with the prepared vegetables in a large mixing bowl.
- Drizzle the dressing over the salad, toss gently to combine, and sprinkle chopped herbs and nuts on top.
- Let it sit for a few minutes before serving to allow flavors to meld.
Notes
For best results, make this salad a few hours ahead and chill it to enhance flavors.
