Ingredients
- 2 lbs Yukon Gold or red potatoes, cubed
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp chili powder (to taste)
- Salt and pepper, to taste
- Juice of 1 lime
- 1/2 cup fresh cilantro, chopped
Instructions
- Preheat the oven to 425°F (220°C).
- Prepare the potatoes by cleaning and cutting them into evenly sized cubes, about 1-inch.
- Toss the potatoes in a large bowl with olive oil, minced garlic, smoked paprika, cumin, chili powder, salt, and pepper.
- Spread the seasoned potatoes on a baking sheet in a single layer.
- Roast for 25-30 minutes, stirring halfway through for even crispiness.
- Remove from the oven and squeeze fresh lime juice over the top, then toss with chopped cilantro.
- Serve immediately, optionally topped with crumbled feta or sour cream.
Notes
To avoid crowding, use two baking sheets if necessary. If desired, let potatoes marinate in the seasoning for 30 minutes before roasting for extra flavor.
