Ingredients
- 3 lbs beef chuck roast
- 1/2 cup soy sauce
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp sesame oil
- 2 tbsp brown sugar or honey
- 4 cups beef or vegetable broth
- 2 carrots, chopped
- 1 onion, chopped
- 8 oz shiitake or button mushrooms, sliced
- Salt and pepper to taste
Instructions
- Sear the Meat: Season beef roast with salt and pepper. Heat oil in a large pot over medium-high heat and sear the roast on all sides until browned.
- Prepare the Marinade: In a bowl, whisk together soy sauce, garlic, ginger, sesame oil, brown sugar, and broth. Add rice vinegar for extra zing if desired.
- Add Vegetables: Remove the roast and add onions, carrots, and mushrooms to the pot, stirring until slightly softened.
- Combine and Simmer: Return the roast to the pot and pour marinade over it. Bring to a simmer, cover, and cook on low for 2-3 hours until tender.
- Finish and Serve: Remove the roast, let it rest for 10 minutes, and increase heat to thicken sauce. Serve sliced with vegetables and sauce, garnished with sesame seeds and green onions.
Notes
Searing the meat is crucial for flavor. Allow the meat to rest after cooking for juicier slices.
