- 1 lb ground chicken

- 1 cup diced cucumbers
- 1 cup diced bell peppers
- 1 cup chopped fresh parsley
- 1/2 cup Greek yogurt
- 1/2 cup grated cucumber
- 1 clove minced garlic
- 1 tsp dill
- 2 tbsp lemon juice
- Lemon wedges for serving
Instructions
- Cook the ground chicken: In a large skillet over medium heat, add a splash of olive oil and the ground chicken. Break it apart with a spoon and cook until browned, about 6–8 minutes. Season with salt, pepper, oregano, and a bit of garlic powder for an aromatic punch.
- Prepare the vegetables: While the chicken cooks, roughly chop your choice of veggies—tomatoes, cucumbers, and bell peppers lend vibrant color and textures to your bowl.
- Mix the tzatziki sauce: Combine Greek yogurt, freshly grated cucumber, minced garlic, dill, lemon juice, salt, and a splash of olive oil in a bowl. Stir until well combined and adjust seasoning to taste.
- Assemble the bowls: Start by placing a generous scoop of the cooked ground chicken at the center of each bowl. Layer the chopped vegetables around it and crown with a generous dollop of tzatziki sauce.
- Garnish and serve: Sprinkle fresh parsley and a light drizzle of olive oil over the bowls. Serve with extra lemon wedges for a bit of extra zing.
