Ingredients

  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar
  • 24 oz full-fat cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • 2 ripe bananas, mashed
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 2 tbsp granulated sugar (for whipped cream)
  • Additional banana slices for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine crushed graham crackers with melted butter and sugar in a bowl until mixed.
  3. Press this mixture into the bottom of a springform pan to form an even layer. Bake for about 10 minutes and let it cool.
  4. Beat the softened cream cheese in a large bowl until smooth. Gradually add in sugar, then add eggs one at a time, mixing on low speed.
  5. Add the mashed bananas, sour cream, and vanilla extract to the cream cheese mixture. Mix until creamy, being careful not to overbeat.
  6. Pour the banana cheesecake mixture over the cooled crust. Bake for 55-60 minutes, until just set.
  7. Turn off the oven and let the cheesecake cool inside for an hour. Then refrigerate to chill.
  8. Whip the heavy cream with sugar until stiff peaks form, and spread it over the chilled cheesecake.
  9. Garnish with additional banana slices if desired, and let it chill for at least four hours before serving.

For an ultra creamy texture, consider using a water bath method while baking.
