Ingredients
- 1 ½ cups crushed graham crackers
- ½ cup unsalted butter, melted
- ⅓ cup granulated sugar
- 24 oz full-fat cream cheese, softened
- ¾ cup granulated sugar
- 3 large eggs
- 2 ripe bananas, mashed
- 1 cup sour cream
- 1 tsp vanilla extract
- 1 cup heavy cream
- 2 tbsp granulated sugar (for whipped cream)
- Additional banana slices for garnish
Instructions
- Preheat your oven to 325°F (160°C).
- Combine crushed graham crackers with melted butter and sugar in a bowl until mixed.
- Press this mixture into the bottom of a springform pan to form an even layer. Bake for about 10 minutes and let it cool.
- Beat the softened cream cheese in a large bowl until smooth. Gradually add in sugar, then add eggs one at a time, mixing on low speed.
- Add the mashed bananas, sour cream, and vanilla extract to the cream cheese mixture. Mix until creamy, being careful not to overbeat.
- Pour the banana cheesecake mixture over the cooled crust. Bake for 55-60 minutes, until just set.
- Turn off the oven and let the cheesecake cool inside for an hour. Then refrigerate to chill.
- Whip the heavy cream with sugar until stiff peaks form, and spread it over the chilled cheesecake.
- Garnish with additional banana slices if desired, and let it chill for at least four hours before serving.
Notes
For an ultra creamy texture, consider using a water bath method while baking.
