- 2 large Potatoes (russet or Yukon gold)
- 2 tablespoons Taco seasoning
- 1 cup Sharp cheddar cheese
- 1/2 cup Sour cream or Greek yogurt
- 1/4 cup Fresh cilantro, diced tomatoes, green onions, and avocado
- 8 ounces Mushrooms (cremini or button)
- 2 tablespoons Olive oil or butter
Instructions
- Prepare the Potatoes: Wash and peel the potatoes. Cut into bite-sized cubes and boil in salted water until fork-tender (15-20 minutes).
- Season the Potatoes: Drain and cool slightly. In a bowl, combine potatoes with taco seasoning and olive oil or butter.
- Cook the Mushrooms: Sauté mushrooms in olive oil over medium heat for about 5-7 minutes until golden brown.
- Assemble Your Bowls: Layer seasoned potatoes, sautéed mushrooms, and cheese. Top with sour cream or Greek yogurt.
- Add Fresh Toppings: Garnish with diced tomatoes, avocado slices, and cilantro or green onions.
