Ingredients

  • 8 ounces Mushrooms (cremini or button)
  • 2 tablespoons Olive oil or butter

Instructions

  1. Prepare the Potatoes: Wash and peel the potatoes. Cut into bite-sized cubes and boil in salted water until fork-tender (15-20 minutes).
  2. Season the Potatoes: Drain and cool slightly. In a bowl, combine potatoes with taco seasoning and olive oil or butter.
