Ingredients
- 2 Honeycrisp apples, sliced
- 1 cup feta cheese, crumbled
- 4 cups mixed greens (arugula, spinach, or spring mix)
- 1/2 cup walnuts or pecans, chopped
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Wash and dry the mixed greens, then place them in a large bowl.
- Core and slice the Honeycrisp apples into thin wedges, and toss them in with the greens.
- Sprinkle the feta cheese over the top.
- Chop your choice of nuts and sprinkle them in for that needed crunch.
- Whisk together olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl to make the dressing.
- Drizzle the dressing over the salad just before serving and toss gently to combine.
- Serve immediately and enjoy!
Notes
To prevent browning, soak sliced apples in lemon juice if preparing ahead. Dress the salad just before serving for maximum freshness.
