Ingredients

  • 2 Honeycrisp apples, sliced
  • 1 cup feta cheese, crumbled
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 1/2 cup walnuts or pecans, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Wash and dry the mixed greens, then place them in a large bowl.
  2. Core and slice the Honeycrisp apples into thin wedges, and toss them in with the greens.
  3. Sprinkle the feta cheese over the top.
  4. Chop your choice of nuts and sprinkle them in for that needed crunch.
  5. Whisk together olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl to make the dressing.
