Ingredients
- 1 lb Ground Turkey
- 2 medium Zucchini, sliced
- 1 medium Onion, chopped
- 3 cloves Garlic, minced
- 1 cup Tomato Sauce
- 1 cup Mozzarella Cheese, shredded
- 1/2 cup Parmesan Cheese, grated
- 1 tbsp Olive Oil
- 1 tsp Basil, chopped
- 1 tsp Oregano, chopped
- Salt and Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and sauté onion and garlic until fragrant, about 3-4 minutes.
- Add the ground turkey, season with salt and pepper, and cook until browned, about 5-7 minutes.
- Stir in the zucchini and cook for another 5-7 minutes until slightly softened.
- Pour in the tomato sauce and simmer for 3-5 minutes.
- Layer half of the turkey-zucchini mixture in a baking dish, top with cheese, add the remaining mixture, and finish with more cheese.
- Cover with foil and bake for 25 minutes, then uncover and bake for an additional 10-15 minutes until cheese is bubbly.
- Let it rest for 10 minutes before serving.
Notes
Feel free to add other vegetables like bell peppers or mushrooms for more nutrition. Ensure to properly drain excess moisture from zucchini before baking.
