- 1 lb boneless chicken (breast or thighs)
- 4 cloves garlic, minced

- 1 cup freshly grated Parmesan cheese
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/4 cup fresh parsley, chopped
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Prepare your ingredients: chop the garlic, cube the chicken, and zest and juice the lemon.
- Cook the rice according to package instructions, substituting half of the water with chicken broth.
- Sauté the chicken in a skillet with butter and olive oil for about 6-8 minutes.
- Add garlic to the chicken and cook for an additional minute.
- Make the sauce by squeezing in lemon juice and adding parsley, then remove from heat.
- Combine the garlic Parmesan rice with the chicken scampi and drizzle with buttery garlic sauce.
- Garnish with extra parsley and Parmesan before serving.
