Ingredients
- 1 lb boneless chicken (breast or thighs)
- 1/2 cup sweet chili sauce
- 1/4 cup mayonnaise
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup shredded carrots
- 1 cucumber, sliced
- 2 green onions, chopped
- 2 cups cooked rice or noodles
Instructions
- Marinate the chicken: In a bowl, mix chicken with half the sweet chili sauce, minced garlic, and a sprinkle of salt. Allow it to marinate for at least 30 minutes.
- Cook the chicken: Heat a skillet over medium-high heat. Add a splash of oil and cook the chicken until golden brown on both sides, about 5-7 minutes per side. Let it rest and dice into bite-sized pieces.
- Prepare the sauce: In a small bowl, combine the remaining sweet chili sauce and mayonnaise until smooth. Adjust to taste.
- Build your bowl: Start with a base of rice or noodles, layer on the diced chicken, top with bell peppers, carrots, and cucumbers. Drizzle with the bang bang sauce, then sprinkle with green onions.

Notes
For a vegetarian version, substitute chicken with tofu. Use Greek yogurt for a lighter sauce. Garnish with cilantro or sesame seeds for added flavor.
