Ingredients
- 2 cups cooked rice (day-old or freshly cooked)
- 1 cup seafood mix (shrimp, scallops, squid)
- 1 cup mixed vegetables (peas, carrots, green onions)
- 2 eggs (optional)
- 3 tbsp soy sauce
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
Instructions
- Prepare your ingredients: Break apart day-old rice and chop the vegetables.
- Heat the pan over medium-high heat and add vegetable oil.
- Sauté minced garlic and chopped onion until fragrant.
- Cook the seafood mix for 3-4 minutes until opaque.
- Add chopped vegetables and stir-fry for another 2 minutes.
- Incorporate the rice and stir-fry for about 5 minutes.
- Season with soy sauce, add salt and pepper to taste.
- Scramble eggs in the pan if using, mixing them into the rice.
- Finish with sliced green onions and drizzle sesame oil before serving.
- Serve hot and enjoy!
Notes
Use cold rice for best results. Feel free to customize with your favorite vegetables or proteins.
