Ingredients
- 1 lb flank or sirloin steak
- 8 oz cremini or button mushrooms, sliced
- 1 cup couscous or quinoa
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1/2 cup feta cheese, crumbled
- Fresh parsley or mint, chopped
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare the steak: Season with salt, pepper, and olive oil. Marinate for 30 minutes.
- Cook the grains: Prepare couscous or quinoa according to package instructions; add lemon juice afterward.
- Sauté the mushrooms: Heat olive oil in a skillet; add mushrooms and cook until golden brown.
- Grill or pan-sear the steak: Cook for 4-5 minutes on each side for medium-rare. Let rest before slicing.
- Chop the vegetables: Diced cucumbers, chopped tomatoes, add herbs and lemon juice.
- Assemble your bowls: Start with grains, then layer mushrooms, vegetables, sliced steak, and sprinkle feta cheese.
- Serve and enjoy: Drizzle with olive oil and allow guests to customize their bowls.
