Irresistibly delicious blondies with a cinnamon sugar swirl, perfect for sharing and evoking warm memories.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Incorporate the eggs one at a time, beating well after each addition; stir in the vanilla extract.
  4. Mix together the flour, baking powder, baking soda, and 1 teaspoon of cinnamon in a separate bowl.
  5. Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  6. Prepare the cinnamon swirl by combining the remaining cinnamon and granulated sugar in a small bowl.
  7. Layer half of the blondie batter into the prepared pan and sprinkle with half of the cinnamon sugar mixture. Top with the remaining blondie batter.
  8. Swirl the batter gently using a knife and sprinkle with the remaining cinnamon sugar on top.
  9. Bake for 25–30 minutes, or until edges are golden and a toothpick inserted comes out mostly clean.
  10. Slice into squares and serve warm, optionally with vanilla ice cream.

Notes

For a vegan option, replace eggs with flaxseed meal and use coconut oil for half the butter.
