Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Incorporate the eggs one at a time, beating well after each addition; stir in the vanilla extract.
- Mix together the flour, baking powder, baking soda, and 1 teaspoon of cinnamon in a separate bowl.
- Gradually add the dry mixture to the wet ingredients, mixing just until combined.
- Prepare the cinnamon swirl by combining the remaining cinnamon and granulated sugar in a small bowl.
- Layer half of the blondie batter into the prepared pan and sprinkle with half of the cinnamon sugar mixture. Top with the remaining blondie batter.
- Swirl the batter gently using a knife and sprinkle with the remaining cinnamon sugar on top.
- Bake for 25–30 minutes, or until edges are golden and a toothpick inserted comes out mostly clean.
- Slice into squares and serve warm, optionally with vanilla ice cream.
Notes
For a vegan option, replace eggs with flaxseed meal and use coconut oil for half the butter.
