- 1 lb lean Ground Beef
- 2 large Potatoes, diced
- 1 medium Onion, chopped
- 3 cloves Garlic, minced
- 1 tbsp Olive Oil
- 1 cup mixed Vegetables (bell peppers, carrots, snap peas)

- Salt and Pepper to taste

Instructions
- Prepare your ingredients: Wash and peel the potatoes, dice them into uniform cubes, and chop the onion and garlic.
- Heat olive oil in your skillet over medium heat.
- Cook the ground beef: Add the beef and season with salt and pepper. Brown for 5-7 minutes.
- Sauté the aromatics: Push the beef to the side and add the onions and garlic, cooking until translucent.
- Combine everything: Mix the beef with onions and garlic, then add the diced potatoes.
- Add the vegetables if using, and stir everything together.
- Season generously with herbs and spices.
- Cover and simmer: Reduce heat, cover, and let cook for 15-20 minutes until the potatoes are tender.
- Serve garnished with fresh herbs.
