Ingredients
- 2 medium zucchinis
- 1 lb ground turkey or chicken (or plant-based meat alternative)
- 1 cup mozzarella cheese, shredded
- 1/2 cup ricotta cheese
- 1/4 cup Parmesan cheese, grated
- 2 cups crushed tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchini into thin rounds and sprinkle with salt. Let sit for 10 minutes, then pat dry.
- Heat olive oil in a large skillet over medium heat. Sauté onions and garlic until fragrant, about 3-4 minutes.
- Add ground meat, cooking until browned. If using plant-based meat, follow package instructions.
- Stir in crushed tomatoes and spices; simmer for a few minutes.
- In a separate bowl, combine ricotta cheese with an egg, Parmesan, salt, and pepper.
- Layer half the zucchini, half the meat mixture, and half the ricotta blend in a baking dish. Repeat layers.
- Top with mozzarella cheese.
- Bake for 30-40 minutes until cheese is melted and bubbly, and zucchini is tender.
Notes
Adding red pepper flakes can enhance the flavor if you like a bit of heat. Cover the casserole with foil if it browns too quickly.
