Ingredients

  • 2 medium zucchinis
  • 1 lb ground turkey or chicken (or plant-based meat alternative)
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup ricotta cheese
  • 1/4 cup Parmesan cheese, grated
  • 2 cups crushed tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini into thin rounds and sprinkle with salt. Let sit for 10 minutes, then pat dry.
  3. Heat olive oil in a large skillet over medium heat. Sauté onions and garlic until fragrant, about 3-4 minutes.
  4. Add ground meat, cooking until browned. If using plant-based meat, follow package instructions.
  5. Stir in crushed tomatoes and spices; simmer for a few minutes.
  6. In a separate bowl, combine ricotta cheese with an egg, Parmesan, salt, and pepper.
  7. Layer half the zucchini, half the meat mixture, and half the ricotta blend in a baking dish. Repeat layers.
  8. Top with mozzarella cheese.
  9. Bake for 30-40 minutes until cheese is melted and bubbly, and zucchini is tender.

Notes

Adding red pepper flakes can enhance the flavor if you like a bit of heat. Cover the casserole with foil if it browns too quickly.
