Crispy and tender Vegetable Ricotta Fritters made with fresh market vegetables and creamy ricotta cheese. A perfect crowd-pleaser for any gathering.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

  • 1 cup ricotta cheese
  • 2 large eggs
  • 1 cup grated zucchini
  • 1/2 cup grated bell peppers
  • 1/2 cup finely chopped mushrooms
  • 1/2 cup breadcrumbs
  • 1 clove garlic, minced
  • Fresh herbs (parsley, basil, or chives)
  • Olive oil (for frying)
  • Salt and pepper to taste

Instructions

  1. Prepare your vegetables: Grate or finely chop the zucchini, bell peppers, and mushrooms.
  2. Mix the batter: In a bowl, combine ricotta cheese, beaten eggs, grated vegetables, breadcrumbs, and minced garlic. Season with salt, pepper, and herbs.
  3. Shape the fritters: Form small patties, about 2-3 inches across.
  4. Heat the oil: In a skillet, heat about 1/4 inch of olive oil over medium heat.
  5. Fry the fritters: Place patties in the skillet and cook until golden brown, about 3-4 minutes per side.
  6. Cool and serve: Allow cooling slightly before serving with yogurt sauce or your favorite dip.

Notes

For a vegetarian option, use Greek yogurt instead of eggs. You can also use cottage cheese instead of ricotta for a different texture.
