Instructions
- Prepare your vegetables: Grate or finely chop the zucchini, bell peppers, and mushrooms.
- Mix the batter: In a bowl, combine ricotta cheese, beaten eggs, grated vegetables, breadcrumbs, and minced garlic. Season with salt, pepper, and herbs.
- Shape the fritters: Form small patties, about 2-3 inches across.
- Heat the oil: In a skillet, heat about 1/4 inch of olive oil over medium heat.
- Fry the fritters: Place patties in the skillet and cook until golden brown, about 3-4 minutes per side.
- Cool and serve: Allow cooling slightly before serving with yogurt sauce or your favorite dip.
Notes
For a vegetarian option, use Greek yogurt instead of eggs. You can also use cottage cheese instead of ricotta for a different texture.
