Ingredients
- 4 boneless, skinless chicken breasts
- 8 oz fresh cremini or button mushrooms
- 1 can cream of chicken soup
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp fresh herbs (thyme or rosemary)
- 2 tbsp butter
Instructions
- Preheat the oven to 375°F (190°C).
- Season your chicken breasts with salt, pepper, and herbs.
- Sear the chicken in a skillet with butter until golden brown, about 5-6 minutes per side.
- Remove chicken and cook mushrooms and garlic in the same skillet for 4-5 minutes.
- Stir in cream of chicken soup and simmer for 2-3 minutes.
- Combine chicken and sauce in the skillet, ensuring it’s well coated.
- Bake in the oven for 20-25 minutes until chicken is cooked through.
- Serve garnished with fresh herbs and enjoy over rice or with mashed potatoes.
Notes
Feel free to substitute chicken thighs or add vegetables like spinach or bell peppers.
