Ingredients
- 4 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup cake flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh strawberries, sliced
- 1 cup heavy cream
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
- Mix the eggs with sugar in a bowl until light and fluffy. Add vanilla extract.
- Incorporate the flour, baking powder, and salt into the egg mixture until just combined.
- Spread the batter evenly in the prepared pan and bake for 12-15 minutes.
- Cool the cake, peel off parchment while warm, and roll in a towel; let it cool completely.
- Whip cream and powdered sugar until soft peaks form, adding a splash of vanilla.
- Unroll the cake, spread whipped cream and strawberries, then reroll without the towel.
- Chill in the fridge for at least 30 minutes before slicing and serving.
Notes
Choose ripe strawberries for the best flavor. The roll can be stored in the fridge for up to three days or frozen for later enjoyment.
