Ingredients

  • 1 package pistachio pudding mix
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 cup chopped pistachios
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream the butter and sugars together in a big mixing bowl until light and fluffy.
  3. Add the egg and vanilla, mixing until fully incorporated.
  4. Combine the pistachio pudding mix, flour, and baking soda in another bowl.
  5. Mix the dry ingredients into the wet mixture gradually until just combined.
  6. Fold in the chopped pistachios.
  7. Scoop the dough onto the baking sheets, spacing them about two inches apart.
  8. Bake for 10 to 12 minutes, until the edges are set but centers remain soft.
  9. Cool for a few minutes on the baking sheets before transferring to wire racks.

Notes

For a different flavor, try using butterscotch or chocolate pudding mix. Chilling the dough for 30 minutes can improve texture.
