Ingredients
- 1 lb boneless chicken (breast or thighs)
- 2 cups salsa verde
- 1 cup creamy cheese (Cheddar or Monterey Jack)
- 2 cups tortilla chips or tortillas
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup fresh cilantro or parsley
- 1 lime, juiced
- 1 tsp cumin
- Salt to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Sauté the onion and garlic in a skillet over medium heat until fragrant and translucent.
- Add the chicken and cook until golden brown, about 7 minutes.
- Combine the cooked chicken, salsa verde, half of the cheese, and any additional vegetables in a mixing bowl.
- Layer tortilla chips or tortillas at the bottom of a baking dish, then pour the chicken mixture over.
- Top with the remaining cheese.
- Bake for 25-30 minutes or until bubbly and golden brown.
- Garnish with fresh herbs and a wedge of lime before serving.
Notes
For added texture, mix crushed tortilla chips into the chicken mixture before layering.
