Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 2 cups salsa verde
  • 1 cup creamy cheese (Cheddar or Monterey Jack)
  • 2 cups tortilla chips or tortillas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro or parsley
  • 1 lime, juiced
  • 1 tsp cumin
  • Salt to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the onion and garlic in a skillet over medium heat until fragrant and translucent.
  3. Add the chicken and cook until golden brown, about 7 minutes.
  4. Combine the cooked chicken, salsa verde, half of the cheese, and any additional vegetables in a mixing bowl.
  5. Layer tortilla chips or tortillas at the bottom of a baking dish, then pour the chicken mixture over.
  6. Top with the remaining cheese.
  7. Bake for 25-30 minutes or until bubbly and golden brown.
  8. Garnish with fresh herbs and a wedge of lime before serving.
