A delightful combination of flaky biscuits layered with juicy strawberries and topped with freshly whipped cream, perfect for summer gatherings.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon granulated sugar (for macerating strawberries)
  • 1 batch shortcake biscuits (homemade or store-bought)
  • 1 cup heavy cream
  • 1 tablespoon granulated sugar (for whipped cream)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Prep the strawberries by rinsing and hulled, then slice and sprinkle with sugar to macerate.
  2. Make the biscuits by mixing flour, sugar, baking powder, and salt; cut in cold butter and add milk.
  3. Bake the biscuits at 425°F for about 15 minutes until golden.
  4. Whip the cream with sugar and vanilla in a chilled bowl until soft peaks form.
  5. Assemble the cups by layering broken biscuits, strawberries, and whipped cream in serving cups.
  6. Serve immediately or chill for a short time before serving.

Notes

To enhance sweetness, macerate strawberries before assembly. Keep ingredients separate until close to serving to avoid soggy biscuits.
