Ingredients
- 2 Boneless chicken breasts or thighs
- 2 cups Stale pretzels, crushed
- 1/4 cup Spicy brown mustard
- 1 cup Cheddar cheese, freshly shredded
- 3 cloves Garlic, minced
- 2 Eggs
- 1/4 cup Olive oil or cooking spray
- 1/2 cup All-purpose flour (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the pretzels in a resealable plastic bag and crush them into small crumbs.
- Whisk together mustard and shredded cheddar in a small bowl.
- Set up a breading station with flour, egg mixture, and crushed pretzels.
- Dredge each chicken piece in flour, dip in egg, and coat with pretzel crumbs.
- Bake for 20-25 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
- Drizzle with mustard-cheddar sauce during the last 5 minutes of baking.
- Let the chicken rest for a few minutes before serving.
Notes
For a gluten-free option, use gluten-free pretzels or breadcrumbs. Let the chicken sit at room temperature for 15 minutes before cooking for even cooking.
