Ingredients
- Noodles (ramen, udon, or rice noodles)
- Potstickers (store-bought or homemade)
- Mushrooms (shiitake, cremini, or button)
- Aromatics (garlic and ginger)
- Broth (vegetable or chicken)
- Vegetables (bell peppers, bok choy, carrots, and snow peas)
- Fresh herbs (cilantro or green onions)
- Soy sauce or tamari
- Sesame oil
Instructions
- Cook the Potstickers: In a non-stick skillet over medium heat, add a little oil and arrange potstickers in a single layer. Cook for about 2-3 minutes until the bottoms are golden brown. Add water, cover, and steam for another 5 minutes, until cooked through.
- Prepare the Broth: In a separate pot, heat broth on medium heat. Add minced garlic and ginger, followed by chosen vegetables. Simmer until veggies are tender but still vibrant.
- Cook the Noodles: While the broth simmers, prepare noodles according to package instructions. Drain and set aside.
- Combine and Serve: In a large bowl, place noodles, pour broth over them, and carefully add potstickers. Garnish with fresh herbs, sesame oil, and a sprinkle of chili flakes.
- Enjoy: Sit back and savor the flavors as you dig in.
Notes
For a gluten-free option, use rice noodles and tamari instead of soy sauce. Add any seasonal vegetables you have on hand for a personalized touch.
