- 1 cup Greek yogurt
- 2 tablespoons lemon juice
- 1/4 cup milk
- Salt and pepper to taste
- 1 cup diced cucumbers
- 1 cup halved cherry tomatoes
- 1 cup diced bell peppers
- Fresh basil or parsley for garnish
- 1 cup cooked protein (optional: grilled chicken, chickpeas, etc.)
Instructions
- Cook the pasta in boiling water according to package instructions until al dente; drain and rinse with cold water.
- Whisk together the Greek yogurt, lemon juice, milk, salt, and pepper in a separate bowl to prepare the dressing.
- Combine the cooled pasta, vegetables, and optional protein in a large mixing bowl. Pour dressing over and mix gently.
- Present in cups, layering the pasta salad and garnishing with fresh herbs.
- Chill the cups in the fridge for at least one hour before serving to enhance flavors.
