Ingredients

  • 1 cup peanut butter (creamy or crunchy)
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup chocolate chips (semi-sweet or dark)
  • 1/4 cup chia seeds or flaxseeds
  • 1/2 teaspoon nutmeg (optional)
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Combine ingredients: In a large mixing bowl, stir together peanut butter, honey (or maple syrup), oats, and any add-ins you’d like, such as chocolate chips and seeds.
  2. Chill: Cover the bowl and refrigerate for about 30 minutes.
  3. Roll into bites: Scoop out a tablespoon of the mixture and roll it into a ball. Repeat until the mixture is gone!
