- 1 cup peanut butter (creamy or crunchy)
- 1 cup rolled oats
- 1/2 cup honey or maple syrup
- 1/2 cup chocolate chips (semi-sweet or dark)
- 1/4 cup chia seeds or flaxseeds
- 1/2 teaspoon nutmeg (optional)
- 1/2 teaspoon cinnamon (optional)
Instructions
- Combine ingredients: In a large mixing bowl, stir together peanut butter, honey (or maple syrup), oats, and any add-ins you’d like, such as chocolate chips and seeds.
- Chill: Cover the bowl and refrigerate for about 30 minutes.
- Roll into bites: Scoop out a tablespoon of the mixture and roll it into a ball. Repeat until the mixture is gone!
- Store: Place the energy bites in an airtight container and keep them in the fridge.
Notes
If the mixture is too sticky to roll, add more oats or chill for a bit longer.
