- 2 lbs Chicken (breast or thighs)
- 1/2 cup Peri-Peri sauce
- 1.5 cups White rice
- 1 cup Bell peppers, diced
- 1/2 cup Onions, diced
- 1 cup Mushrooms, sliced
- 3 tbsp Olive oil
- 1/4 cup Cilantro, chopped
- 1 Lemon, juiced
- Garlic, minced to taste
Instructions
- Marinade the chicken: In a bowl, combine the chicken with peri-peri sauce, letting it soak for at least an hour, or overnight if possible.
- Cook the rice: In a saucepan, cook the rice according to package instructions, using vegetable broth for extra flavor.
- Sauté the vegetables: In a skillet, heat olive oil over medium heat, add bell peppers, onions, and mushrooms, cooking until tender.
- Cook the chicken: Preheat your grill or skillet and cook marinated chicken for 6-8 minutes per side until cooked through.
- Combine: Fluff the rice and toss in sautéed vegetables. Slice chicken and nestle on top of rice.
- Serve: Garnish with cilantro and lemon wedges.
Notes
Allow chicken to rest before slicing to keep it juicy. Adjust seasoning to taste.
