  • 3 tbsp Olive oil
  • 1/4 cup Cilantro, chopped
  • 1 Lemon, juiced
  • Garlic, minced to taste

Instructions

  1. Marinade the chicken: In a bowl, combine the chicken with peri-peri sauce, letting it soak for at least an hour, or overnight if possible.
  2. Cook the rice: In a saucepan, cook the rice according to package instructions, using vegetable broth for extra flavor.
  3. Sauté the vegetables: In a skillet, heat olive oil over medium heat, add bell peppers, onions, and mushrooms, cooking until tender.
  4. Cook the chicken: Preheat your grill or skillet and cook marinated chicken for 6-8 minutes per side until cooked through.
  5. Combine: Fluff the rice and toss in sautéed vegetables. Slice chicken and nestle on top of rice.
