Ingredients
- 4 boneless chicken breasts or thighs
- 8 ounces fresh button mushrooms, sliced
- 3 tablespoons butter
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup cream or sour cream
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh thyme
- Salt and pepper to taste
Instructions
- Prepare the chicken: Season your chicken with salt and pepper. Heat a tablespoon of butter and olive oil in a skillet over medium-high heat.
- Sear the chicken: Cook the chicken for about 5-6 minutes on each side until it’s golden brown and cooked through. Remove it from the skillet and set aside.
- Sauté the aromatics: In the same pan, add a little more butter, and toss in sliced onions and minced garlic. Sauté until the onions are translucent and fragrant.
- Add the mushrooms: Stir in your mushrooms, allowing them to cook down and release their moisture for about 5-7 minutes, until they turn golden.
- Create the sauce: Pour in the chicken broth and bring to a simmer. Let it reduce slightly, then stir in the cream. Add herbs, adjusting seasoning to taste.
- Combine it all: Return the chicken to the skillet, and let it soak up the flavors for a few minutes. Simmer gently until everything is well combined and warmed through.
- Serve: This dish shines when served hot, ideally over rice or creamy mashed potatoes. Garnish with fresh herbs.
