Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan for easy release.
  2. Cream together the unsalted butter and granulated sugar until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition. Incorporate the limoncello and lemon zest.
  4. Whisk together the all-purpose flour, baking powder, and a pinch of salt in another bowl.
  5. Gradually add this dry mixture to the wet ingredients, alternating with buttermilk, beginning and ending with the flour.
  6. Pour the batter into your prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Prepare the limoncello glaze by mixing powdered sugar with limoncello until smooth.
  9. Drizzle the glaze over the cooled cake, allowing it to soak in slightly.
