Ingredients
- Chicken (breast or thighs), boneless and skinless
- Fresh lemon juice and zest from large lemons
- Garlic, fresh and minced
- Romano cheese, grated
- Olive oil, extra virgin
- Fresh herbs (parsley, basil, or thyme)
- Salt and pepper
Instructions
- Prep the chicken by butterflying if thick, pat dry, and season with salt and pepper.
- Make the coating by combining breadcrumbs with Romano cheese, lemon zest, and olive oil.
- Dredge each piece of chicken in the breadcrumb mixture for an even coating.
- Sauté in a hot skillet with olive oil, cooking each side for about 5-7 minutes.
- Cook until golden brown, adding fresh lemon juice towards the end.
- Prepare an optional sauce by deglazing the skillet with broth and adding minced garlic.
- Serve hot, garnished with fresh herbs and extra Romano cheese.
Notes
For an alternative, use shrimp or tofu instead of chicken. Fresh garlic is recommended for the best flavor.
