Ingredients

  • Chicken (breast or thighs), boneless and skinless
  • Fresh lemon juice and zest from large lemons

  • Romano cheese, grated

  • Salt and pepper

Instructions

  1. Prep the chicken by butterflying if thick, pat dry, and season with salt and pepper.
  2. Make the coating by combining breadcrumbs with Romano cheese, lemon zest, and olive oil.
  3. Dredge each piece of chicken in the breadcrumb mixture for an even coating.
  4. Sauté in a hot skillet with olive oil, cooking each side for about 5-7 minutes.
  5. Cook until golden brown, adding fresh lemon juice towards the end.
