Ingredients
- 2 lbs boneless chicken thighs or breasts
- 2 ripe peaches, sliced
- 2 fresh jalapeños, chopped
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 2 tbsp brown sugar
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Marinate the chicken in a mixture of lime juice, olive oil, salt, and pepper for at least 30 minutes.
- Heat olive oil in a large skillet over medium heat, add chopped onion, and sauté until translucent, about 3-5 minutes.
- Add minced garlic and jalapeños, and sauté until fragrant.
- Cook the marinated chicken in the skillet for 5-7 minutes on each side until golden brown and fully cooked.
- Add sliced peaches and brown sugar, stirring until the peaches soften and create a sauce.
- Stir in freshly chopped cilantro and a squeeze of lime juice before serving.
- Serve warm over rice or quinoa and enjoy!
Notes
Feel free to adjust the spice levels by deseeding the jalapeños. For a twist, substitute cilantro with fresh basil or parsley.
