Ingredients

  • 2 lbs boneless chicken thighs or breasts
  • 2 ripe peaches, sliced
  • 2 fresh jalapeños, chopped
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp brown sugar
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken in a mixture of lime juice, olive oil, salt, and pepper for at least 30 minutes.
  2. Heat olive oil in a large skillet over medium heat, add chopped onion, and sauté until translucent, about 3-5 minutes.
  3. Add minced garlic and jalapeños, and sauté until fragrant.
  4. Cook the marinated chicken in the skillet for 5-7 minutes on each side until golden brown and fully cooked.
  5. Add sliced peaches and brown sugar, stirring until the peaches soften and create a sauce.
  6. Stir in freshly chopped cilantro and a squeeze of lime juice before serving.
