Ingredients
- 1 lb boneless chicken breasts or thighs
- 2 fresh oranges (zest and juice)
- 1/4 cup soy sauce
- 1/2 cup cornstarch
- 2 eggs
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 tsp chili flakes
- Oil for frying
- 2 tbsp sugar
Instructions
- Prepare the chicken: Cut the chicken into bite-sized pieces, ensuring even cooking.
- Marinate: In a bowl, combine the chicken, soy sauce, minced garlic, ginger, and a splash of orange juice. Let it sit for at least 30 minutes to absorb the flavors.
- Coating: In another bowl, whisk together eggs and cornstarch. Coat each piece of marinated chicken in the egg mixture, then roll in cornstarch for that crispy finish.
- Fry the chicken: Heat oil in a large skillet over medium-high heat. Once hot, fry the chicken in batches, ensuring not to overcrowd the pan. Cook until golden brown and cooked through, about 5-7 minutes.
- Make the sauce: In the same skillet, combine the orange juice, soy sauce, sugar, and chili flakes. Bring to a simmer, letting it thicken slightly.
- Toss and serve: Add the chicken back to the skillet, coating every piece with that luscious sauce. Serve hot over rice or with your favorite vegetables.
Notes
For extra crisps, ensure oil is hot before frying. Use fresh ingredients for best flavor.
