Ingredients
- 2 cups boneless, skinless chicken (breast or thighs)
- 2 cups fresh broccoli, chopped
- 6 strips thick-cut bacon
- 1 cup sour cream
- 1 cup shredded sharp cheddar cheese
- 2 cloves garlic, minced
- 1 onion, finely diced
- 1 cup low-sodium chicken broth
- Salt and pepper to taste
- Dried herbs (thyme or parsley) to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the bacon in a large skillet over medium heat until crispy. Remove and drain on paper towels.
- Sauté diced onions and minced garlic in the reserved bacon drippings until fragrant.
- Add chicken pieces and cook until browned on all sides, about 5-7 minutes.
- Mix together sour cream, chicken broth, salt, pepper, and herbs in a bowl.
- Combine chicken, broccoli, and creamy mixture in a casserole dish. Top with crumbled bacon and shredded cheese.
- Bake covered for 25 minutes. Remove foil and bake for another 10-15 minutes until cheese is melted and bubbly.
- Serve in large portions and enjoy!
Notes
This casserole can be customized with other vegetables or turkey instead of chicken. It’s great for leftovers and can be frozen for later use.
