Instructions
- Cook the Pasta: Start by boiling a pot of salted water and cook your chosen pasta according to the package instructions until al dente. Reserve about 1 cup of pasta water before draining.
- Sauté the Vegetables: In a large skillet over medium heat, melt butter and add sliced mushrooms, diced onions, and bell peppers. Sauté until tender and golden, about 5-7 minutes. Add minced garlic in the last minute of cooking for an aromatic burst.
- Make the Sauce: Pour in the heavy cream and sprinkle the Cajun seasoning. Stir to combine, letting it simmer for a few minutes to thicken the sauce.
- Combine Everything: Add the drained pasta to the skillet, tossing everything together. If the sauce seems too thick, gradually incorporate some reserved pasta water until you reach the desired consistency.
- Finish and Serve: Stir in freshly grated Parmesan cheese until melted and creamy. Top with freshly chopped parsley or chives for color and serve immediately.
Notes
For a lighter version, substitute heavy cream with half-and-half or coconut milk for a dairy-free option. Experiment with different vegetables to customize the dish.
