Ingredients
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream (or coconut cream for dairy-free)
- 2 tbsp Cajun seasoning
- 4 cloves garlic, minced
- 8 oz mushrooms, sliced (button or cremini)
- 1 medium onion, chopped
- 1 cup cooked chicken or sausage (optional)
- ½ cup freshly grated Parmesan cheese
- 1 tbsp olive oil
Instructions
- Cook the Pasta: Boil a pot of salted water, add pasta, and cook until al dente. Reserve 1 cup of pasta water, then drain.
- Sauté the Aromatics: In a skillet over medium heat, heat olive oil and sauté onions until translucent, then add garlic.
- Add the Mushrooms: Stir in sliced mushrooms and cook until golden brown.
- Make the Sauce: Pour in heavy cream and add Cajun seasoning; stir and simmer. Adjust consistency with reserved pasta water as needed.
- Incorporate the Pasta: Toss the drained pasta in the skillet and mix until evenly coated. Add chicken or sausage if using.
- Final Touches: Stir in Parmesan cheese, taste and adjust seasoning, then serve hot garnished with fresh herbs.
Notes
For a lighter option, substitute heavy cream with a lighter cream or use whole grain pasta for added fiber. Serve with a side salad or garlic bread.
