Ingredients

  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 2 tbsp Cajun seasoning
  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced (button or cremini)
  • 1 medium onion, chopped
  • 1 cup cooked chicken or sausage (optional)
  • ½ cup freshly grated Parmesan cheese
  • 1 tbsp olive oil

Instructions

  1. Cook the Pasta: Boil a pot of salted water, add pasta, and cook until al dente. Reserve 1 cup of pasta water, then drain.
  2. Sauté the Aromatics: In a skillet over medium heat, heat olive oil and sauté onions until translucent, then add garlic.
  3. Add the Mushrooms: Stir in sliced mushrooms and cook until golden brown.
  4. Make the Sauce: Pour in heavy cream and add Cajun seasoning; stir and simmer. Adjust consistency with reserved pasta water as needed.
  5. Incorporate the Pasta: Toss the drained pasta in the skillet and mix until evenly coated. Add chicken or sausage if using.
  6. Final Touches: Stir in Parmesan cheese, taste and adjust seasoning, then serve hot garnished with fresh herbs.

Notes

For a lighter option, substitute heavy cream with a lighter cream or use whole grain pasta for added fiber. Serve with a side salad or garlic bread.
