Ingredients

  • 1 cup cottage cheese
  • 2 cups fresh spinach, chopped
  • 4 large eggs
  • 1/2 cup feta or shredded mozzarella cheese

  • 1/4 teaspoon nutmeg
  • Salt and pepper, to taste
  • Olive oil, for sautéing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté chopped spinach in a skillet with a drizzle of olive oil until wilted. Set aside to cool.
  3. Mix together the eggs, cottage cheese, salt, pepper, and herbs in a large bowl. Stir in the cooled spinach and cheese.
  4. Pour the mixture into a greased pie dish or oven-safe skillet.
