Ingredients
- 1 cup cottage cheese
- 2 cups fresh spinach, chopped
- 4 large eggs
- 1/2 cup feta or shredded mozzarella cheese
- 1 tablespoon fresh dill, basil, or thyme
- 1/4 teaspoon nutmeg
- Salt and pepper, to taste
- Olive oil, for sautéing
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté chopped spinach in a skillet with a drizzle of olive oil until wilted. Set aside to cool.
- Mix together the eggs, cottage cheese, salt, pepper, and herbs in a large bowl. Stir in the cooled spinach and cheese.
- Pour the mixture into a greased pie dish or oven-safe skillet.
- Bake for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Cool for a few minutes before slicing and serving.
Notes
Feel free to substitute cottage cheese with ricotta or use different greens like kale or Swiss chard as needed.
