Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg (or flax egg)
- 2 cups all-purpose flour (or gluten-free flour)
- 1 tsp baking powder
- 2 cups fresh strawberries, hulled and sliced
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Cream the butter and sugar together until fluffy.
- Add the egg and mix well.
- Mix the dry ingredients (flour and baking powder) in a separate bowl and then combine with the wet ingredients.
- Shape tablespoon-sized portions of dough into boats on a baking sheet.
- Bake for 10-12 minutes or until golden brown around the edges.
- Prepare strawberries by hulling and slicing, then mixing them with sugar.
- Assemble the cooled cookie boats by filling them with sweetened strawberries.
- Dust lightly with powdered sugar before serving.
- Serve and enjoy!
Notes
Chill the dough for 30 minutes before baking for defined shapes. Serve with whipped cream or vanilla ice cream.
