Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg (or flax egg)
  • 2 cups all-purpose flour (or gluten-free flour)
  • 1 tsp baking powder
  • 2 cups fresh strawberries, hulled and sliced
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and sugar together until fluffy.
  3. Add the egg and mix well.
  4. Mix the dry ingredients (flour and baking powder) in a separate bowl and then combine with the wet ingredients.
  5. Shape tablespoon-sized portions of dough into boats on a baking sheet.
  6. Bake for 10-12 minutes or until golden brown around the edges.
  7. Prepare strawberries by hulling and slicing, then mixing them with sugar.
  8. Assemble the cooled cookie boats by filling them with sweetened strawberries.
  9. Dust lightly with powdered sugar before serving.
