Ingredients
- 1 lb boneless, skinless chicken breasts
- 4 cups mixed greens (romaine and spinach)
- 1 cucumber, chopped
- 1 bell pepper, chopped
- 1 cup carrots, shredded or julienned
- 1/2 cup roasted, unsalted peanuts
- 1/4 cup fresh herbs (cilantro and mint)
- Juice of 1 lime
- 1/4 cup peanut butter
- 2 tbsp honey
Instructions
- Cook the chicken: Season with salt, pepper, and olive oil. Sauté in a hot skillet over medium heat for 6-7 minutes per side until cooked through.
- Prepare the vegetables: Chop all vegetables into bite-sized pieces.
- Make the dressing: Whisk together peanut butter, lime juice, honey, soy sauce, and a sprinkle of salt. Adjust thickness with water if needed.
- Combine everything: In a large bowl, toss mixed greens, vegetables, sliced chicken, and peanuts. Drizzle with dressing and toss gently.
- Serve and enjoy: Plate the salad and garnish with fresh herbs.
Notes
For a vegetarian option, replace chicken with chickpeas or tofu, and use sunflower seeds instead of peanuts for a nut-free version.
