- 1 jar marinated artichoke hearts, drained and chopped
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded cheese (mozzarella or a blend)
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Fresh herbs (like parsley or dill), for garnish
Instructions
- Prepare the fresh spinach by sautéing it in a little olive oil over medium heat until wilted. Add the minced garlic towards the end to avoid burning.
- Mix the softened cream cheese, sour cream, and 1 cup of shredded cheese in a large mixing bowl until smooth.
- Add the sautéed spinach and chopped artichoke hearts, folding gently to retain texture.
- Season with salt, pepper, and herbs to taste. Transfer to a baking dish and sprinkle remaining cheese on top.
- Bake at 350°F (175°C) for about 25 minutes or until bubbly and golden.
- Serve warm with tortilla chips, fresh veggies, or toasted baguette slices.
Notes
For a lighter version, substitute Greek yogurt for sour cream. Ensure you drain artichokes well to avoid watery dip.
