Ingredients

  • 2 cups fresh spinach
  • 1 jar marinated artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheese (mozzarella or a blend)
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh herbs (like parsley or dill), for garnish

Instructions

  1. Prepare the fresh spinach by sautéing it in a little olive oil over medium heat until wilted. Add the minced garlic towards the end to avoid burning.
  2. Mix the softened cream cheese, sour cream, and 1 cup of shredded cheese in a large mixing bowl until smooth.
  3. Add the sautéed spinach and chopped artichoke hearts, folding gently to retain texture.
  4. Season with salt, pepper, and herbs to taste. Transfer to a baking dish and sprinkle remaining cheese on top.
  5. Bake at 350°F (175°C) for about 25 minutes or until bubbly and golden.
  6. Serve warm with tortilla chips, fresh veggies, or toasted baguette slices.

Notes

For a lighter version, substitute Greek yogurt for sour cream. Ensure you drain artichokes well to avoid watery dip.
